[Vegetarian] Greek Power Salad

My university offers an on-campus Subway style salads-and-wraps restaurant (if that made any sense to you). Anyways, they have tons of options of toppings, protein, and dressings so you can create the salad of your dreams.

This is a vegetarian friendly salad and I believe vegan too as well. I started with a Spring Mix of romaine, spinach, and iceberg. Then I topped it with Garbanzo Beans also know Chickpeas, diced Red Onion, diced fresh Tomato, and Kalamata Olives. Instead of a meat I added Quinoa for protein and Feta Cheese. Lastly, of course Greek dressing.

This salad was super delicious and filling. It kept me full all day and is a great alternative to Greek Salad if you don’t want to eat so much meat.

Sugar: 7 g

Fat: 22 g
